A rich, creamy chocolate mousse made with ripe avocados and dark chocolate, finished with fresh raspberries for a burst of flavor and color.

I first tried avocado chocolate mousse when searching for healthier desserts to enjoy with my family. This version surprised everyone with its ultra-smooth texture and deep chocolate flavor & it&s become our go-to treat ever since.

Ingredients

  • Ripe avocados: 2 large, peeled and pitted
  • Dark chocolate: 100 g (3.5 oz), 70% cocoa, chopped
  • Unsweetened cocoa powder: 3 tbsp
  • Pure maple syrup (or honey): 4 tbsp
  • Pure vanilla extract: 2 tsp
  • Sea salt: Pinch
  • Unsweetened almond milk (or milk of choice): 3 tbsp, more as needed
  • Fresh raspberries: 125 g (1 cup)
  • Dark chocolate, shaved or chopped: 1 tbsp, optional
  • Fresh mint leaves: optional, for garnish

Melt Chocolate:
Melt the dark chocolate in a heatproof bowl over a pot of simmering water (double boiler) or in the microwave, stirring until smooth. Allow to cool slightly.
Blend Ingredients:
In a food processor, combine avocados, melted dark chocolate, cocoa powder, maple syrup, vanilla extract, and sea salt. Blend until completely smooth and creamy, scraping down the sides if needed.
Adjust Consistency:
Add almond milk, one tablespoon at a time, and blend until the mousse reaches your desired consistency.
Taste & Adjust:
Taste and adjust sweetness if needed by adding more maple syrup.
Chill Mousse:
Spoon the mousse evenly into 4 serving glasses or bowls. Cover and refrigerate for at least 1 hour.
Add Toppings:
Before serving, top each mousse with fresh raspberries, shaved chocolate, and mint leaves if desired.

Method

Phase 01

Melt Chocolate: Melt dark chocolate in a heatproof bowl over simmering water or in short microwave bursts, stirring until smooth, then allow to cool slightly.

Phase 02

Blend Base Ingredients: In a food processor, combine avocados, melted dark chocolate, cocoa powder, maple syrup, vanilla extract, and sea salt. Blend until completely smooth, scraping down sides as needed.

Phase 03

Incorporate Almond Milk: Add almond milk one tablespoon at a time, blending until desired mousse consistency is reached.
