01 - 4 slices sourdough bread
02 - 4 tablespoons unsalted butter, softened
03 - 4 slices sharp cheddar cheese
04 - 2 slices mozzarella cheese

06 - 3 tablespoons honey
07 - 1 teaspoon hot sauce (Sriracha or preferred type)
08 - 1/4 teaspoon red pepper flakes (optional)
# Method:
01 - Combine honey, hot sauce, and red pepper flakes in a small bowl until well mixed. Set aside.
02 - Place bacon slices in a skillet over medium heat and cook until golden and crisp. Remove bacon and drain on paper towels.
03 - Spread softened butter evenly on one side of each slice of sourdough bread.
04 - Arrange two slices of bread, buttered sides down, on a clean surface. Layer with cheddar cheese, mozzarella cheese, and crispy bacon. Cover with remaining bread, buttered sides facing up.
05 - Heat skillet or grill pan over medium-low. Add sandwiches and cook for 3 to 4 minutes per side, pressing gently, until bread is browned and cheese has melted.
06 - Remove sandwiches from pan, slice each in half, and finish with a generous drizzle of hot honey.
