01 - 240 ml plain Greek yogurt
02 - 240 ml whole milk
03 - 120 ml vegetable oil

04 - 375 g all-purpose flour
05 - 150 g granulated sugar
06 - 1 tbsp baking powder
07 - 0.5 tsp baking soda
08 - 0.5 tsp fine sea salt

09 - 2 large eggs
10 - 2 tsp vanilla extract
11 - 60 g rainbow sprinkles
# Method:
01 - Preheat oven to 190°C (375°F). Line a standard 12-cup muffin tin with paper liners.
02 - In a large mixing bowl, whisk together Greek yogurt, whole milk, vegetable oil, eggs, and vanilla extract until smooth.
03 - In a separate bowl, blend all-purpose flour, granulated sugar, baking powder, baking soda, and salt until evenly mixed.
04 - Gently fold dry ingredients into the wet mixture until just combined. Do not overmix.
05 - Carefully fold in rainbow sprinkles until evenly distributed throughout the batter.
06 - Spoon the batter evenly into the prepared muffin cups, filling each approximately two-thirds full.
07 - Place muffin tin in preheated oven and bake for 20–23 minutes, or until a toothpick inserted into the center emerges clean.
08 - Allow muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely before serving.
