# Method:
01 - Over medium-low heat, melt butter in a skillet. Add sliced onion, sugar, and salt. Cook gently, stirring occasionally, until the onions are deeply caramelized and golden, about 12 to 15 minutes. Use low heat for optimal sweetness and flavor.
02 - Transfer caramelized onions and pan juices to a blender. Add 2 tablespoons milk and blend thoroughly until smooth. Strain the mixture through a fine-mesh sieve to achieve a silky texture.
03 - Brew 2 fluid ounces espresso and divide between two cups. Add 1 tablespoon strained onion purée to each cup, stirring until well incorporated.
04 - Heat the remaining milk until steaming hot. Froth with a milk frother or whisk until creamy and foamy.
05 - Pour frothed milk over the espresso-onion mixture in each cup. Sweeten with honey or maple syrup if desired. Stir gently and serve immediately.
