Ingredients
- Chicken Patties: 500 g (1.1 lb) ground chicken breast, 1 small onion, finely chopped, 1 clove garlic, minced, 1 egg, lightly beaten, 60 g (½ cup) whole wheat breadcrumbs, 1 tbsp Dijon mustard, 1 tbsp chopped fresh parsley, ½ tsp smoked paprika, ½ tsp salt, ¼ tsp black pepper
- Yogurt Sauce: 120 g (½ cup) Greek yogurt (low fat), 1 tbsp lemon juice, 1 tbsp chopped fresh dill or parsley, ½ tsp garlic powder, Salt and pepper to taste
- Assembly: 8 whole wheat slider buns, 1 small tomato, sliced, 1 small cucumber, sliced, 50 g (2 oz) baby spinach or lettuce leaves, 8 thin slices red onion
Instructions
- Step 1:
- Preheat oven to 200°C (400°F). Line a baking sheet with parchment paper.
- Step 2:
- In a large bowl, combine ground chicken, onion, garlic, egg, breadcrumbs, mustard, parsley, smoked paprika, salt, and black pepper. Mix until just combined.
- Step 3:
- Divide mixture into 8 equal portions and shape into small patties.
- Step 4:
- Place patties on the prepared baking sheet. Bake for 18 20 minutes, flipping halfway, until golden and cooked through (internal temperature should reach 74°C/165°F).
- Step 5:
- Meanwhile, in a small bowl, mix Greek yogurt, lemon juice, dill or parsley, garlic powder, salt, and pepper to make the sauce.
- Step 6:
- Toast slider buns lightly if desired.
- Step 7:
- To assemble, spread a little yogurt sauce on the bottom half of each bun, add a patty, top with tomato, cucumber, spinach or lettuce, and red onion. Add more sauce if desired. Cover with the top bun.
- Step 8:
- Serve immediately.
